It’s a lazy Sunday and I don’t feel like being too much on the computer. But I am so in love with this blackcurrant jam I made yesterday that I want to quickly share it with you.
Don’t forget about those berries that just started to be everywhere around – the are health powerhouses! Packed with wit. C and antioxidants, help your body to detoxify, improve immunity big time and are anti-inflammatory. They will also improve your muscles, ligaments and tendons flexibility – a benefit that every yoga practitioner will appreciate. And the chia seeds? Those are in the group of the most healthy foods on this planet – for me that is a reason enough to finish my jar of the jam by the end of the Weekend 🙂
RECIPE
Small jar of jam
1 glass of blackcurrants
3 tbsp of chia seeds
3 tbsp of dates syrup
Clean the fruits and remove the stems. Put them in a pot on a small heat and melt them with the fork or potato masher so they reveal the juice. Don’t bring to boil, let them become runny and warm and remove from the heater. Mix in the chia seeds and the sweetener – I like my jam pretty sour so try for yourself before you decide if it’s sweet enough. Set aside for 30-40 min so the seeds absorb the moisture and gel the mixture. It will become even more jelly after putting in the fridge. Enjoy on a warm toast, in your smoothie or topped on the hot porridge.
