Double choco truffles (sugar free, gluten free)
Easy and quick sweet weekend treat – for Mum, for friends, for yourself. This version has a bit sugar that was in the dark chocolate that I used to cover those goodies but you can use raw cacao powder to make it double choco 100% sugar-free truffles.
RECIPE
Over a dozen truffles
3 tbsp pumpkin seeds
4 tbsp roasted almonds
4 full tbsp quick oats
3 tsp raw cacao
2 tsp carob molasses
1 full tbsp coconut oil
5 soft dates
5-6 soft dried plums (if they’re not soft soak them for 15 min in a bit of hot water and drain)
½ tsp
cardamom powder
dark chocolate bar
Put pumpkin seeds, almonds and oats into a blender and mix till they’re finely chopped. Add all the other ingredients apart from the chocolate bar and blend until they become firm and easy to form into balls. If too dry – add a bit of coconut oil or plum water. Roll into balls, put on a tray so they do not touch each other and cool in a freezer for a 10-15 min. Melt the chocolate in the water bath and dip each ball in it (toothpicks are pretty helpful;)). Cool down in a fridge or freezer and enjoy – they are almost sin free 😉
