Vegan carob and apricot spelt cookies
In my opinion, one need the sweet taste to survive Autumn in Poland and I am not an exception. Wht I try to do is to keep it both pleasurable and healthy. This here is a quick recipe I invented using the spelt flakes instead of common oats and carob instead of cocoa (so if you want to avoid stimulants choose carob).
RECIPE
13-16 cookies (depends on the size, mine were more or less 6-7 cm diameter)
150 g spelt flakes
70 g spelt flour
75 g coconut oil
1 chia egg (1 tbsp ground chia seeds mixed with 2-3 tbsp water and set aside for 5 min)
1 tbsp xylitol
2 tbsp beetroot molasses (or dates/maple/agave syrup/honey)
0,5 tsp baking soda
0,25 tsp baking powder
2 spoonfull carob powder
6 dried apricots cut into slices (I use the dark, non-sulfur ones)
0,5 tsp cinnamon
0,5 tsp turmeric
0,25 tsp nutmeg
0,25 tsp ground clove
pinch of salt and pepper
Heat the oven to 180 Celcius degrees.
Mix flakes with all dry ingredients. Add the apricots and mix again.
Put the coconut oil on the heater or in the water bath to make it runny and add to the dry ingredients with the molasses. Stir throughout.
Form little balls and put on the baking tray covered with the baking sheet and flatten with the palm of your hand.
Bake 10-12 min, let them cool and enjoy!
