Warming oatmeal with plums
Autumn in Poland equals warming breakfasts and plenty of plums. I came up with this piping hot, cinnamon-scented oatmeal today and topped it with sour-sweet, thick and sticky, colourful plums puree.
RECIPE
Oatmeal – 1 big or 2 small bowls
7 tbsp oats
150 ml water
150 ml vegan milk (I used oat milk)
0,5 tsp ground cinnamon
pinch of salt
optionally: 0,5 tsp vanilla essence
Boil the water and milk, add spices, salt and oats and let it cook on low heat for 3-5 min stirring occasionally.
Plums puree
10-15 plums
1 tbsp coconut oil
1 tsp ground cinnamon
0,5 tsp ground nutmeg
pinch of salt
splash of water
optionally: 1 tsp vanilla essence
Melt coconut oil on the pan, add the plums (cleaned, halved, stones removed), sprinkle with spices and let fry for a moment. Add salt, a little water, cover with a lid and let boil on a small heat for ca. 10 min until they’re soft and let out the juice (you can add a bit more water if you want a more runny puree). Blend using a hand blender or a cup blender.
Top the oats with a plum sauce, add sliced figs, banana, roasted walnuts and sprinkle with black sesame seeds. The plums are so sweet there is no need to add any other sweetener. Enjoy!
