Pumpkin spice millet porridge with apple, figs and goji berries
I believe we deserve some exceptional treats on those cold, autumn mornings when we lack the sun and energy. Those moments should taste a bit like 1st day of Christmas when we lazily snack on the delicacies from the Christmas table wrapped in the warm blanket and new socks from the Santa. It’s worth to wake up a bit earlier just to enjoy this sweet idleness. To brew some fresh coffee, collect scented spices, dates and nuts and prepare a delicious, filling, heart and soul-warming breakfast.
RECIPE
Ingredients (1 hearty serving):
3 tbsp millet flakes
1 tsp of pumpkin spice mix (grounded: cinnamon, cloves, star anise, cardamom, nutmeg)
½ cup water
¼ cup vegan milk of choice
3 tbsp pumpkin puree
1 small apple, shredded (unpeeled)
1 tbsp goji berries
3 dried dates diced
2 dried figs diced
7-8 almonds, diced and roasted on the hot pan
1 tsp coconut oil
1 tsp rice/maple syrup
Put the millet flakes and pumpkin spice mix into the saucepan and roast 2-3 minutes on the smallest flame stirring. Pour water and simmer for 3 minutes making sure you don’t burn the flakes. Add goji, figs and dates, pumpkin puree, apple and milk, stir and simmer for 3 more minutes. Transfer the mixture into a bowl, drizzle with coconut oil and sprinkle roasted almonds. The porridge will be sweet thanks to the fruits but you can add sweet syrup if desired. It is equally delicious when made with oats, give it a try!
